What do you make when you have no kitchen? This is what we ate last week, delicious and simple. I made shortcuts I normally don’t like buying precut veggies and frozen veggies, saved some time and made my little space so much easier to work in. These are all dishes that take less than 20 minutes of active cooking & some are on the table in that time! I am using a little camp stove, a crockpot, a rice cooker, and a microwave as my new kitchen. The crockpot was really great I want to experiment more with this underutilized tool in my kitchen. I am surprised how well my little “kitchen” works, dishes in the bathtub I could do without but oh well!
Sunday: Tomato Soup & Grilled Cheese
Monday: Coconut Rice with Edamame
Tuesday: Spicy Slaw with Soy-Glazed Tofu
Wednesday & Thursday: Red Lentil “Dahl”
Friday: Soba Noodles
Saturday: Pizza & Beer at the Agassiz Uphill 🙂 – This is a Flagstaff annual event at the local ski resort to raise money for a local camp – Camp Colton
